Founded in 2007, DAOU Family Estates is a family-owned winery in Paso Robles, California, renowned for its world-class Cabernet Sauvignons and Bordeaux-style wines. Founded by brothers Georges and Daniel Daou, DAOU has emerged as a paragon of Paso Robles and one of California’s most celebrated wineries. Consistently earning top praise from publications like Wine Enthusiast and Wine Advocate, DAOU wines are known for their precision and distinct terroir expression. Their Cabernet Sauvignon rivals the finest from Napa and Bordeaux—yet remains an affordable by-the-glass luxury.
We’re thrilled to welcome Spencer Johnston, Executive Chef at DAOU Winery, and Marino Monferrato, Vice President of Hospitality Operations, who will guide us through each wine pairing. Marino brings a rich hospitality background, having worked at numerous 5-Star, 5-Diamond, and Michelin-starred restaurants—and is widely recognized as the maître d'hôtel on Hell’s Kitchen. In April, Chef Hugo traveled to Paso Robles to collaborate on a special dinner at DAOU. Now, Chef Spencer brings his California roots to Houston to join Chef Hugo and Chef Ruben Ortega for a one-night-only culinary collaboration you won’t want to miss!
